Food Coma
Happy Thanksgiving!
I am officially stuffed from the Thanksgiving dinner, family time, super carb loading, and of course — followed by online shopping. :) I swear the holidays come non-stop after Halloween.
For the first time, I learned how to make whipped icing — the kind on the Asian sponge cakes and OMG, it will make you fall in love with cakes like no other. The icing is so light, fluffy and you get to control the sweetness — the more reason to lick the icing off the spoon and savor every bite. It made me reminisce about the first time I learned how to bake (early teens) and how I was constantly baking cupcakes non-stop because the idea of cake batter transforming into “actual cake” was incredible! The fact that it became something edible that I created made appreciate baking. Here I am, a decade later, bringing the back the sweets. :))
being thankful and feeling grateful:
Thankful for having a wonderful family dinner and P for cooking the turkey. This is the third year my sister hosted Thanksgiving at her home.
Thankful that I still have a job — with this insane pandemic, I am grateful to be employed and have a paycheck monthly.
Thankful for so many opportunities to keep my hustle alive and opening another outlook to future business ventures
Thankful that my mom is in great health — alive and well.
Shout out to my boo — Happy six-aversary! I appreciate the time you spend with me and accepting me for who I am (especially my weirdness.) I look forward to more!
